His German natural ham is a lush, barely salty, cooked ham with a nutty sweetness and a delicious rim of satin fat ($11.97 a pound); it is far from waterlogged boiled deli ham. A tasty Berlin barbecue ham is edged in spice ($11.97 a pound), but it is milder than the salty and smoky paper-thin slices of landschinken, a cured ham served like prosciutto ($19.87 a pound). There are also delicate, small slices of rosy smoked pork loin wrapped in bacon, called the queen of hams ($22.97 a pound). The hams are all boneless, and most are sold sliced. Sample tastes of hams, as well as sausages and salamis, are available.
